
got these out of a house clearance.
I have started to clean up and shapen the right hand side chef's knife and the middle smaller one but both have a slight S-curve due to previous poor sharpening technique I assume. The steel itself appears good quality. the black handled one has 'SABATIER' marked on the plastic but the wood handled one doesn't have anything distinctive.
The left hand is ivory handle carving knife and looks to have a well used but straight blade, just some surface rust and resharpening. Has 'London made' etched on the blade.
Are the curved ones salvageable and DIYable or do I need a pro to reshape the edges properly? And are the worth it?
I have a small long-oval shaped whetstone with rough/smooth side and a classic steel for sharpening.
