I’d say the second, the broader blade gives you more distance to avoid getting your fingers in the meat.
I’m not a fan of the hole, especially since it’s quite large it seems like it would interfere with a pinch grip and makes the throat needlessly thick. Hard to say how the scales feel in hand, I’d rather have something a bit more rounded but for a skinner the handle is not a huge deal.

I think I prefer the shape of the green one, but I’m not a big fan of holes in the blade. The forward jimping on the orange one is a nice touch. Now, if they got together and had a baby…
