I picked up this new Muela CI95191. Really well made out of the box but I wonder what this Inox steel is and maybe a rough equivalent to it so I have some sort of idea of what to expect from it besides that it’s stainless and the blade style is mostly just to do pointy things.

Muela does a lot of basic (or classic, if we’re being generous) stainless, internet shows this model as 420HC. That doesn’t mean it’s bad.. tough, easy to sharpen, doesn’t hold an edge too long.
