
I have a peña paramour since this January, it never left my studio and never cut more than a sheet of paper and it already showing some pitting of rust. So why use uncoated M4 when there are so many good stainless steel available?

FWIW I don’t see any kind of rust on that blade. Maybe a haze of patina.
Anyway, M4 is tougher than most stainless steels and has equivalent wear resistance. Also very nice to sharpen. This question is kind of like asking, “why does anyone drive a truck, when there are plenty of different SUVs to choose from?” It’s because different steels excel in different areas, and we all have slightly different priorities to which we should cater our steel choices.
If you were using it on things like food it would develop a cool unique patina. Plenty of people prefer that type of character to a polish or satin sterile aesthetic. It has a lot of desirable properties as a steel.
