The Brooklyn restaurant St Anshelm uses these Opinel stainless folders as their steak knives. I asked which model they are but all I got back was “they’re on back order, I’m not sure”. Can anyone ID this model?

    Oh I hope not. Opinels have too many nooks and porous wood that it would be insanely bad to use these for juicy meat like that. They would prob start the next major health crisis outbreak, that is if the cheap wood handles didn’t all snap first.
