What do y’all think about sharpening your nice knives

    I put a really nice edge on this shiro. But I did mark the plunge grind a bit in the process. Still would rather sharpen them than have them get dull.

    I sharpen all of my knives because I use all of them?

    $50 or $800, it’s getting used to cut stuff.

    I sharpen all my knives no matter the value. Hitting the plunge makes a person cringe but at the end of the day it’s a knife so it is what it is. When I sharpen my customers high end knives I tape as much as possible to avoid scratches

    I wouldn’t sharpen it myself if it costs more than $200.

    I have a relatively nice setup with quick clamps and resin stones, but I just don’t trust myself and I feel like a professional could probably get better results.

  7. I disassemble, clean, reassemble, and put a mirror edge on every knife, no matter the price. Its “my thing” to make it officially mine.

    I find that woth mirror edges, if youre wondering about resale or something, most people view it as a bonus/upgrade, not a bad mod. Assuming you don’t do a terrible job.

    The small knicks on the ricasso are hard to see so its not so bad. It only looks bad because you know it is there. Even shiros are tools to be used.
