None of these have ever been carried but while they were stored over the past few decades they’ve gotten this rust or whatever on them. I’m not an expert but would love to remove it. What’s the best way to get them to remove the storage rust?

On knives this nice I would start with flitz metal polish. Its the most gentle way that will have the least impact on the metal. With bad rust I use mineral oil and fine steel wool then flitz but it wont be as nice as when they were new.
Start with Evaporust or electrolysis, neither involved scratching the surface with abrasives.
