why can you only keep one?

S110V isn’t worth the maintenance imo, so I’d shed the PM2. I’m don’t really care for the griptillian, so I wouldn’t keep it either. Magnacut is my favorite of the steels, but I like the Shaman slightly better than the Manix, not that S30V is hard to maintain. Hard to say, but it would be between those 2 for me
