A good habit is to search a steel for its data sheet & see what the temperature of the temper is. Blade steel tempers are usually from 300F to +1000F. [Here](https://www.alphaknifesupply.com/Pictures/Info/Steel/CPMS90-DS.pdf) is a data sheet for S90V. If you look under Thermal Treatments you’ll see a Temper section. This lists a temper of as low as 400F. You can lower your potential heat input by not using the finner grit belts on blades with lower temper, increase your pass speed & dipping in water afer a couple passes to keep blade at ambient temp
Great sharpener! I ended up with a couple dozen belts for mine. A factory set for carbon/HSS, a set for stainless, a set of 7 leather belts with (5) diamond slurry/(2)compound (1 set for CS/HSS & 1 set for stainless) from 5 micron to .25 micron.
Practice on a cheap gas station knife until you’re comfortable with your technique.
