I prefer steak for patina. Makes a really nice oil slick over time with lots of blue tones and some reds and oranges mixed in. That said maxamet isn’t really that stainy of a steel. I’ve owned my p3 in maxamet for the better part of a decade and never oiled it and it only has a slight discoloration from hand oil around the thumb hole during use. It was my daily for nearly 2 years rain or shine.
You want something that will patina really nice, look at k390. That stuff gets beautiful
