Your edge? Not toooooo much work. You will probably only need a 3000-5000 grit stone, higher if you’re a perfectionist. But you’ll need to still start at your low grit diamond stones and work your way up.
That steel may not produce the finish for a polish. S30V doesn’t, so I have to believe 110v, no way. But you should be able to get a clean hand rubbed finish. Dull the edge first 🙂
I’m not sure exactly what equipment but Maxace tells me it takes about 24 hours to mirror polish one blade with their equipment – which is why they produce so few of them.
Mostly I’ve seen M390 and ZDP-189 steel mirror polished.
