What's the best route to restore this bad boy to tip top? I've never done anything with old knives so I was just gonna use some gun oil and some 000 steel wool unless someone tells me that's a terrible idea lol.
It’s carbon steel so making it shiny may not be the right goal. I would steel wool the rust off, reprofile the primary and secondary bevel, then force patina the blade with mustard.

My favorite kitchen knife is my old hickory cleaver that I completely reprofiled. I still need to redo the scales though.

I like to use Flitz or Simichrome polish to remove rust and oxidation. Depending on the pitting you may want to resurface the blade but that would remove the markings and any historic value. Personally I’d remove the active rust, establish a new patina, sharpen it up and use it.
